    The nose presents a beautiful sweet subtle toffee apple dusted with white peppers and spices with a rich smell of lingering red wine in the distance.
    Tasting presents a initial soft mouth feel of sweet toffee with citrus peel flowing into a subtle oily coating of the mouth, the white pepper comes on strong.
    A long warm smooth finish of open fire smoked charcoal crispy apples .
    Double distilled and non chill filtered.

    Aged in a ex- Red wine French oak 80l cask re toasted.
    On the nose you immediately get transported to an orchard filled with sweet slightly overripe red apple, along with newly cut orchard trimmings of said red apples. Moving into fresh out of the oven rhubarb and apple strudel coated with a slight sprinkle of cinnamon carrying soft vanilla / caramel overtones. Taste leads with a light citrus peel turning into hints of ginger, and a kick of white pepper flowing into subtle red apples, the charred barrel comes through warming and coating the mouth via a pleasant oily sensation. A long finish with timber characteristics along with red wine in the background.
    Double distilled and non chill filtered.
    Released at a 44.0% ABV

    Gold Nipper Rum 004 has been developed to be enjoyed neat or as a great base for mixers, including cocktails. Not overpowering in its flavour profile and is created  using a Brown Syrup / Molasses mix. This Rum has been aged in a 200 litre American Oak ex Makers Mark Sour Bourbon Cask giving it a light golden color and light flavour profile. Bottled at the cask strength. Current release is at 50.5% ABV.

Where we have mashed brewed and distilled in house, triple distilled and twice carbon filtered. Our standard product will be released at 46%.
